What you’ll need…
4-6 cups

rough chopped cruciferous veggies
(red cabbage, kale, collards, cauliflower, broccoli, etc) |
4-6 | green onions, chopped |
2 | medium carrots, sliced |
2 | stalks celery, sliced |
¼ cup | extra virgin olive oil |
3 tbsp | unpasteurized apple cider vinegar |
1 | clove garlic, minced |
2 tsp | maple syrup |
salt & cayenne, to taste |
What to do…
- In batches, chop all vegetables in food processor to similar texture. Transfer to large bowl.
- Toss chopped veggies with oil, vinegar, honey and garlic. Season with salt and cayenne to taste.
Notes…
- Use any bits and pieces of cruciferous veggies you have around. Red cabbage and broccoli make it extra fun!
