Cruciferous Confetti Salad
Makes 4 servings
What you’ll need…
|rough chopped cruciferous veggies
(red cabbage, kale, collards, cauliflower, broccoli, etc)
|4-6||green onions, chopped|
|2||medium carrots, sliced|
|2||stalks celery, sliced|
|¼ cup||extra virgin olive oil|
|3 tbsp||unpasteurized apple cider vinegar|
|1||clove garlic, minced|
|2 tsp||maple syrup|
|salt & cayenne, to taste|
What to do…
- In batches, chop all vegetables in food processor to similar texture. Transfer to large bowl.
- Toss chopped veggies with oil, vinegar, honey and garlic. Season with salt and cayenne to taste.
- Use any bits and pieces of cruciferous veggies you have around. Red cabbage and broccoli make it extra fun!
